Dairy Free Almond and Raspberry Chocolate
We like a good treat now and then here at LRC, but we also prefer something that is good for you as well!
So here is our go to treat to take to have ready when visitors pop over – and it couldn’t be easier to make!
( For young kids to enjoy I would substitute almonds for dried fruit)
You’ll need:
Half cup extra virgin coconut oil
Half cup good quality cacao powder
1/4 cup pure good quality maple syrup (I used a little less but whatever takes your fancy)
1/4 cup chopped raw almonds
1/4 cup frozen raspberries
The Method:
Line a baking tray with paper and place your raspberries and almonds on (evenly spaced)
Mix together the coconut oil, cacao powder, and maple syrup (the oil might need a tiny heat up to make it runny if the weather is a bit colder)
Pour the chocolate mix evenly over the top of your raspberries & almonds
Pop in the fridge until set, then break up roughly with your hands
Keep refrigerated (if it lasts that long – let’s face it, probably won’t!) & enjoy!!!
Side Note: You can literally use any combo of fruit and nut you like in this. If you’re one of those crazies that likes pineapple in chocolate or you could pair with some crushed pistachios. Or why not blueberry and coconut? The possibilities are endless!
